Mathilde Cassis Liqueur 375ml
Mathilde Cassis is produced by Cognac Pierre Ferrand, a family-owned French spirits house led by Alexandre Gabriel, who built his reputation on meticulous, small-batch production methods across both cognac and liqueurs. Under the Mathilde name, the house has developed a line of fruit liqueurs that draws on Gabriel's exacting approach to sourcing, favoring specific fruit varieties over generic blends. Cassis stands as one of the range's signature expressions, reflecting the brand's focus on transparency around origin and varietal character rather than broad regional labeling.
This liqueur is made from two black currant varieties grown in Burgundy: Noir de Bourgogne, prized as one of the tastiest currants for eating, and Blackdown, known for its softer, sweeter profile. The fruit is steeped in alcohol for an extended period to draw out deep color and concentrated flavor before sugar syrup and water are added to bring the liqueur to its finished strength. Mathilde Cassis is bottled at 16% alcohol by volume, lower than many competing cassis liqueurs, which keeps the fruit character forward without excess heaviness.
The liqueur is deep, thick, and jammy on the nose, with pronounced black currant and a touch of spice. On the palate it is juicy and rich, balancing natural sweetness against the fruit's characteristic tartness for a concentrated, full-bodied finish.
