The Servin family has been rooted in Chablis for over two hundred years, making them one of the region's most historic producers even as they remain somewhat overlooked outside serious wine circles. François Servin now runs the estate with his brother-in-law, Australian winemaker Mark Cameron, tending roughly thirty hectares that span four Grand Cru and six Premier Cru sites. The domaine's approach favors precision and restraint, letting each individual vineyard's character guide winemaking decisions rather than imposing a house style on every cuvée.

Vaillons sits on Chablis's left bank, a south-facing slope long considered one of the appellation's most classically styled Premier Crus. This bottling comes from vines between twenty-five and thirty-five years old, entirely hand-harvested and fermented on native yeasts. The wine is raised solely in stainless steel tank, a decision meant to preserve the site's natural brightness and keep its chalky, Kimmeridgian soils front and center rather than adding any oak influence.

Aromas of apple, pear, and citrus peel mingle with anise, white lily, and a touch of beeswax. The palate is bright and full-bodied, with fine acidity and a long, mineral-driven finish. It suits pan-seared scallops, cured ham, or a young Comté nicely.

There is once again fine volume and excellent richness to the delicious medium-bodied flavors that possess a subtle minerality on the bone-dry, youthfully austere and borderline tannic finish. At least a few years of cellaring should be beneficial."

"Domaine Servin’s Vaillons is entirely hand-harvested, with these vines ranging from twenty-five to more than thirty-five years of age and right in the sweet spot of their prime. This cuvée is raised entirely in stainless steel tank. The 2023 Vaillons offers up an outstanding nose of apple, pear, a touch of anise, citrus peel, chalky soil tones, white lilies and a topnote of beeswax. On the palate the wine is bright, focused and full-bodied, with lovely depth of fruit at the core, a fine girdle of acidity, excellent mineral drive and grip and a long, impeccably balanced and complex, vibrant finish.
