Ramon Canals traces its roots to a family winery in Castellví de Rosanes, in the heart of the Penedès region, where wine production dates back to the early twentieth century. The modern estate took shape in 1975 when Miquel Canals Ollé and his son Ramon, a trained oenologist, joined forces to produce their first bottled wines and cavas. The brand as it exists today was founded in 1978, and the winery is now guided by the next generation, siblings Ramon and Marta Canals, who continue the family's commitment to sustainable, low-intervention viticulture across their Penedès vineyards.

This rosé cava is made from Garnacha and Pinot Noir, following the traditional method of secondary fermentation inside the bottle. After pressing and an initial vinification, the wine rests on its lees for more than twenty-four months in the Ramon Canals cellars, a lengthy aging period that builds complexity and fine, persistent bubbles. As a Brut Nature, no dosage is added after disgorgement, giving the finished cava its bone-dry character and letting the fruit and terroir speak clearly.

In the glass, the cava shows a delicate salmon-pink hue with a steady, fine bead. The nose offers red berry fruit and citrus, while the palate stays crisp, dry and well balanced, with a clean, lingering finish. It pairs nicely with oysters, cured ham or a simple spread of light tapas.
