Château de Saint-Martin sits on one hundred hectares in the heart of Provence, with vines tracing their origins back to Roman cultivation in the second century BC. The monks of Lérins later transformed the property into a wine-producing priory and built an underground cellar still in use today. A noble French family has owned the estate since 1740, passing it down largely from mother to daughter, with the Comte de Rohan Chabot notably helping establish the Crus Classés de Provence in 1955. Adeline de Barry has directed the domaine since 1993.
The N°2 cuvée blends Grenache, Carignan, Cinsault, Tibouren and Syrah, farmed under sustainable, reasoned viticulture practices. Grapes undergo a brief four to six hour skin maceration before pressing, followed by alcoholic fermentation kept at sixteen to seventeen degrees Celsius to protect delicate aromatics. This careful, low-intervention approach favors freshness and clarity over weight, producing a rosé meant for easy, early drinking rather than extended cellaring.
The wine pours a pale salmon color and opens with a perfumed nose of blood orange and fresh mango. On the palate, ripe orchard and citrus fruit come through in good balance, finishing on notes of white peach and grapefruit. It works well as an aperitif or alongside composed salads, grilled meats or classic Provençal dishes.
