Alma del Jaguar is produced at the fifth-generation Vivanco family distillery in Los Altos, Jalisco — NOM 1414 — using highlands-grown agave at over 6,800 feet elevation, slow-cooked for 54 hours in traditional brick ovens, and double-distilled in copper pot stills. What makes it truly unusual is the fermentation: a custom blend of 80% wild yeast and 20% Champagne yeast, creating a bold, characterful base that carries unmistakable personality even after extended oak aging. 

Single barrel expressions like this open with fresh herbs, soft florals, banana liqueur, and cane sugar on the nose, moving into oak with hints of cherry and fig. The palate delivers coconut, butter, and tropical fruit, followed by a bold hit of cinnamon and black pepper — then vanilla cream, torched citrus peel, tobacco, and dried cherry. The finish is long and trailing, cascading with peppery dark cherry sweetness that lingers.
