Destileria Santanera crafts its tequilas at Cascahuin, a respected distillery in El Arenal, Jalisco, under the direction of maestro tequilero Pablo Lara G. The brand has built its reputation on organic, additive-free production, a philosophy carried through into this Season 1 Blanco release, which carries kosher certification, though it is not certified kosher for Passover.

Production begins with one hundred percent Blue Weber agave, cooked slowly in a traditional clay steam oven rather than the autoclaves or diffusers common at larger operations, a method that draws out gentler, more nuanced sugars from the plant. The cooked agave is milled using a mechanical roller mill, then fermented in stainless steel before undergoing two distillations in stainless steel pot stills. The finished spirit is bottled without chill filtration at forty percent alcohol by volume, preserving more of its natural texture and aromatic oils.

On the nose, this Blanco offers delicate aromas of yellow flowers, sweet potato, and white pepper. The palate follows with honeycomb sweetness, a touch of cardamom, bright Meyer lemon, green olive, and a vegetal edge reminiscent of fresh peppers.
