Marolo Grappa di Brunello 375ml
Marolo is a family-run distillery founded in 1977 in Alba, in Italy's Piedmont region, by proprietor and head distiller Paolo Marolo. Rather than producing standardized, industrial spirits, Marolo focuses on single varietal pomace, sourcing fresh marc from respected wineries across the country and pressing it as quickly as possible. Paolo runs traditional bain-marie copper stills around the clock during harvest, a discontinuous distillation method that demands considerable skill but allows him to guide each batch by hand.
For this bottling, Marolo looked beyond its home region to Tuscany, sourcing Sangiovese pomace from top Brunello di Montalcino producers in the Gotha district. The marc is distilled in small batches using the estate's bain-marie stills, then rested in stainless steel rather than wood, leaving the spirit unaged and clear. This approach keeps the focus on the pomace itself, allowing the aromatic imprint of Brunello grapes to come through without interference from oak.
The nose is delicate, fresh, and distinctly floral, with notes of violet, honeysuckle, and orange blossom layered over peach, apple, and a touch of minerality. On the palate, the flavor turns soft and elegant, echoing the fruit and floral aromas with excellent consistency from nose to finish. It is best served slightly chilled to highlight its perfume.
