Bodegas Barbadillo was founded in 1821 by Don Benigno Barbadillo in Sanlúcar de Barrameda, in the heart of the sherry region, and has grown into one of the area's largest producers, now farming around 500 hectares of vineyards and maintaining a cellar capable of holding tens of millions of liters. The family firm is especially known for its Manzanilla and its "Reliquias" range, and its cellars still hold rare bottlings dating back to the late nineteenth century. Barbadillo remains committed to traditional, largely handmade production even at this scale.

Cuco Oloroso Seco is made entirely from Palomino grapes grown on old vines in the pagos of Gibalbín and Santa Lucía, inland sites in the Jerez Superior known for hotter conditions and earlier-ripening fruit than vineyards closer to the coast. Because Oloroso is fortified to a higher strength than Fino or Manzanilla, no flor forms on its surface, leaving the wine in constant contact with oxygen throughout its aging. Cuco spends around eighteen years maturing this way in American oak casks at the Barbadillo bodegas, moving through a solera and criadera system that slowly concentrates and darkens the wine.

The result is a deep mahogany sherry with orange and red highlights, showing an intense nose of walnuts, toasted wood, and dried fruit. On the palate it is rich and full, dry despite its unctuous texture, with vibrant acidity and a long, spice-laced finish. It pairs beautifully with game, aged cheese, or a lamb curry.
