NV Barbadillo - Jerez Principe Amontillado Sherry HALF BOTTLE (375ml)
Bodegas Barbadillo was founded in 1821 in Sanlúcar de Barrameda by Benigno Barbadillo, who returned to Spain after two decades building his fortune in Mexico and purchased an eighteenth-century property known as Bodega del Toro. In 1827 the house shipped its first casks of Manzanilla to Philadelphia, and shortly after launched Pastora, the world's first bottled Manzanilla. Now led by the seventh generation of the family, Barbadillo has grown into one of the largest producers in the Sherry region, farming roughly 500 hectares of vineyards while remaining one of Spain's oldest privately held companies in any industry.
Príncipe Amontillado is sourced from Barbadillo's celebrated Solear solera, the same base used for the house's flagship Manzanilla. Made entirely from Palomino grapes, the wine begins its life aging biologically as a Manzanilla under flor for roughly eight years, shaped by the cool Atlantic air of Sanlúcar's coastal cellars. Once the flor fades, the wine transitions to oxidative aging within the same criaderas and solera system, adding several more years of maturation before bottling, for a combined age of around twelve to fifteen years.
The result is a bright amber Amontillado with a luminous, almost radiant hue. The nose offers toasted almond, citrus, and a distinct sea-air freshness, carried through to a palate that stays elegant and composed rather than heavy, with a long, saline finish. Serve it with mature cheeses like Manchego or Gruyère, cured meats, or a bowl of mixed nuts.
