NV Bodegas Baron - Jerez-Xeres-Sherry Micaela Amontillado HALF BOTTLE (375ml)
Bodegas Barón was founded in 1895 by Manuel Barón Fernández, who acquired a set of old soleras from Anselmo Paz, an almacenista working in Sanlúcar de Barrameda. Through his wife's family the house's roots trace back nearly four centuries, and today, ten generations later, the winery is run by Jose Rodríguez Jiménez and his sons. The bodega stores close to ten thousand barrels in the historic upper quarter of Sanlúcar and farms roughly one hundred forty hectares of vineyard across three sites.
Micaela Amontillado is made entirely from Palomino grapes and spends its early years aging under flor, the protective layer of yeast that gives young sherries their delicate, biological character. Once that veil naturally disappears, the wine is fortified again and moves into a period of oxidative aging, gradually darkening in color while gaining concentration and complexity over four to five years total.
The result is a wine with nutty aromas of hazelnut, praline, and salted almond, layered with warm wood, a hint of vanilla, and a distinctly saline, coastal edge. On the palate it opens crisp, with a silky texture and a touch of caramel, finishing bone dry with bright, persistent acidity. It pairs beautifully with jamón ibérico, grilled asparagus, mushroom dishes, or aged cheeses.
