Bodegas Hidalgo, known as Hidalgo-La Gitana, was founded in 1792 by José Pantaleón Hidalgo, a native of Santander who settled in Sanlúcar de Barrameda, at the heart of the sherry region. The family-run bodega remains one of the few in Jerez still independently owned, now guided by the eighth generation in direct line from the founder. It farms its own vineyards in some of the region's best pagos and is best known for its widely poured Manzanilla La Gitana, though its premium range, which includes this Oloroso, shows a more serious side of the house.

Faraón is made entirely from Palomino grapes and belongs to Hidalgo's premium line of aged sherries, sitting alongside bottlings like Amontillado Napoleón and Pedro Ximénez Triana. Unlike the biologically aged wines under flor, Oloroso develops through purely oxidative aging in barrel, fortified to a higher strength that prevents flor from forming and allows the wine to darken and concentrate slowly over years spent in the bodega's solera system. This particular Oloroso ages for roughly six years before release.

The finished wine is deep amber in color, dry and intense, with aromas of roasted almond, Brazil nut, and walnut giving it a slightly burly character. Notes of bitter orange, gunpowder tea, and toasted spice carry through to a taut, dry finish. It pairs beautifully with jamón ibérico, aged Manchego, roasted vegetables, or a rich chocolate torte.
