Kizakura - Tozai "Snow Maiden" Junmai Nigori (720ml)

Snow Maiden is produced by Kizakura Brewery in Kyoto's Fushimi district, an area celebrated for centuries as one of Japan's great sake producing regions thanks to its exceptional underground water sources. The sake is released under the Tozai label, a collaborative brand born from the partnership of American importers and the Kizakura brewers, whose name literally translates to "East-West" in a nod to that shared vision. Despite its relatively short modern history compared to some centuries-old houses, Kizakura has built a strong reputation for approachable, well-crafted sake at accessible prices.

Snow Maiden takes its name from Hanako, a famous Japanese koi fish said to have lived 226 years in the icy waters at the foot of Mount Ontake. The sake itself is made from a blend of Gohyakumangoku and Gin-Ohmi rice, polished to 70 percent and left coarsely filtered, giving it the classic cloudy nigori appearance and a thick, creamy texture.

On the nose, expect bright, fresh notes of rice and fruit, while the palate delivers honeydew melon, raw pumpkin, and a touch of radish. Despite its rich, full body, the finish stays surprisingly dry, with a pleasant astringency. Try it chilled with crab, pork, or spicy tuna poke.
