Lake Chalice was established in 1989 with a vision of crafting internationally recognized wines from the heart of Marlborough, and it remains one of the few privately and locally owned wine companies left in New Zealand. Owned by the Ibbotson family, the estate draws on three vineyard sites across the upper Awatere and Wairau valleys, remote country favored by New Zealand's native falcon, the Kārearea, which appears on every Lake Chalice label as a nod to the winery's connection to the surrounding land.

Skye Bubbles is made from one hundred percent Sauvignon Blanc grown across those Marlborough sites, where cool nights and long sunshine hours give the fruit its characteristic intensity. Rather than being finished as a still wine, the base wine is crafted into a lightly sparkling style, capturing the region's classic aromatics and layering them with fine effervescence. The approach favors freshness over complexity, aiming for a wine that stays lively and easy to drink rather than austere or overly structured.

The nose shows bright blackcurrant leaf, gooseberry, and white flowers with a touch of green capsicum and tropical fruit underneath. On the palate, gooseberry and lime juice mingle with white grapefruit and soft melon, carried by lively bubbles to a medium finish that leans slightly off dry. It pairs beautifully with creamy soft cheeses, fried seafood, or a Sunday brunch spread.
