2021 Guimaro - Ribeira Sacra
Guímaro (meaning "rebel" in the local Gallego dialect) was founded in 1991 by Pedro Rodríguez, an organic pioneer who helped put Galicia's rugged Ribeira Sacra region on the international wine map. Vines here are planted on vertigo-inducing, steep terraced cliffs carved out by ancient Romans.
The 2021 entry-level Vino Tinto is a masterful display of "heroic viticulture." It is primarily Mencía, blended with roughly 15% other indigenous field varieties (like Brancellao, Merenzao, and Sousón) from 40-year-old vines rooted in slate and granite. Fermented entirely in stainless steel with wild yeasts and aged on its fine lees without a splinter of oak, this cool, Atlantic-influenced vintage is beautifully fresh, transparent, and packed with wild personality.
Tasting Profile
-
Aroma: Strikingly expressive and floral. The nose bursts open with a bright, perfume-forward bouquet of pomegranates, tart red cherries, and wild raspberries, pinned down by a signature savory matrix of cracked black pepper, fresh violet petals, wet slate, and a touch of damp forest floor.
-
Palate: Light-to-medium-bodied, vibrant, and effortlessly sleek. Mirroring a fine Cru Beaujolais or a cool-climate Pinot Noir, it glides across the palate with crunchy red fruit flavors. The cool 2021 growing season lends a brilliant, mouthwatering acid line that makes the wine feel exceptionally lively and refreshing.
-
Finish: Silky, clean, and driving. The tannins are practically non-existent—soft, integrated, and seamless. It tapers off beautifully with lingering notes of sour cherry, dried herbs, and a chalky, mineral-driven saltiness that keeps you coming back for another glass.
