Tasting notes

Appearance: pale straw with delicate green hints. Nose: lifted notes of lemon zest, green apple, white blossoms, and a whisper of sea spray. Palate: crisp and focused, with citrus and white peach flavors supported by a subtle herbal edge; a pronounced mineral backbone leads to a clean, persistent finish.

"Full bottle 1,311 g. Vegan-friendly. Planted at 480 m in Alagni, central Crete, dry-farmed. Eight hours' skin contact. 10% of the grapes harvested early for extra freshness. Fermented in tank. Aged on lees for 4.5 months. TA 6.15 g/l, pH 3.16.

Super-intense and utterly distinctive aroma of bay leaf, rosemary, even a little resinous – not unlike some aromatic Savatiano wines but this is more scented and less savoury, less resinous. This is a real step up in intensity from how I remember the 2020: benchmark, whole-hearted, so fresh and so lively. A wine with its heart and its aroma on its sleeve. I would love to try this with roast chicken stuffed with lemon and thyme or rosemary (sadly none to hand). The skin contact has added a gentle and attractive pithy texture that matches the flavours perfectly.
