Toni Bodenstein’s living library of Grüner. In 1997 the geologist and biodiversity champion behind Prager replanted an abandoned terrace at the very top of Achleiten with 110 different Grüner Veltliner genetics, aiming to preserve the grape’s old diversity. Wachstum means “growth,” and this tiny high-altitude parcel on Gföhl gneiss has since become one of Prager’s most sought-after wines, with only about 6,000 bottles made.

Expect the signature Bodenstein style: flinty and crystalline, with lemon zest, white pepper and herbs over a pure mineral core, then a juicy, elegant palate and a long, salty finish. Fermented spontaneously in stainless steel, it’s all purity and precision, with the structure to age for decades. Pair with schnitzel, roast chicken, shellfish or aged cheeses.
