Bozal Iberico Sacrificio Mezcal 750ml
Mezcal Bozal is a craft, artisan-focused brand built around the wild side of agave spirits, sourcing from the steep, remote hillsides of Oaxaca and Guerrero rather than cultivated fields. This bottling comes from the Río de Ejutla region of Oaxaca, produced under master distillers Don Adrian and Lucio Bautista. It represents the sacrificio style, an old mezcalero tradition once reserved for personal, ceremonial, and festive occasions rather than commercial sale, and Bozal has worked to bring that small-batch practice to a wider audience while preserving its ritual character.
The mezcal is made from a blend of Espadín, Mexicano, and Tobasiche agaves. The piñas are roasted in an underground earthen oven, then milled and fermented before a first distillation in a copper pot still. For the second and final distillation, a piece of seasoned jamón ibérico is suspended inside the still alongside aromatic herbs, spices, and seasonal fruit, infusing the spirit as it condenses and giving the sacrificio its distinctive savory character.
The nose is citrus forward, with lime and grapefruit alongside a tropical hint of banana. The palate turns viscous and savory, carrying wet earth, smoke, and a faint floral note of hibiscus, while herbaceous, salty, and meaty flavors extend into a long, complex finish.
