Courvoisier traces its roots to 1809, when Emmanuel Courvoisier and Louis Gallois ran a wine and spirits trading business in Bercy, just outside Paris. Their sons, Félix Courvoisier and Louis Gallois, formalized the cognac house in 1828, relocating operations to Jarnac on the banks of the Charente River. The house built its reputation as a skilled blender, sourcing eaux-de-vie from producers across the region rather than relying solely on estate-grown grapes, a trading heritage it maintains today.

Courvoisier V.S. is crafted primarily from Ugni Blanc grapes grown in the Fins Bois cru, with a smaller share coming from Petite Champagne. Following the traditional double distillation in Charentais copper pot stills, the eaux-de-vie are matured for a minimum of two years, with much of the blend aged three to seven years, in French oak sourced from the Limousin forests. Courvoisier also favors an upright cask storage method during early aging, meant to improve contact with the wood and speed extraction of flavor.

The nose is light and fresh, showing apple and pear with a touch of vanilla. On the palate, that same orchard fruit carries through, joined by soft toasted oak and a gentle floral note that lingers into a clean, moderately long finish.
