Fidencio Mezcal was launched in 2009 by fourth-generation maestro mezcalero Enrique Jiménez, named in tribute to his great-grandfather Fidencio Jiménez, who began making mezcal in Santiago Matatlán over a century ago. The family's palenque, Fábrica de Amigo del Mezcal, has passed its knowledge down through four generations, and Enrique continues to work from the same estate-grown agave and traditional techniques his forebears developed through years of trial and error. Rather than chasing trends, the Jiménez family has built Fidencio's reputation on consistency and a commitment to quality over volume.

Clásico is produced entirely from estate-grown Espadín agave, harvested at roughly ten years of age to ensure full maturity and concentrated flavor. The piñas are roasted for about three days in a traditional stone-lined earthen pit, then fermented using ambient yeast before being twice distilled in a custom wood-fired alembic still modeled on Cognac production. The mezcal is bottled at still strength without dilution, and the operation is notable for being both certified organic and biodynamic.

The nose offers delicate wood smoke layered with green pepper and dried tobacco, while the palate unfolds with red apple, pine, and roasted agave alongside hints of vanilla and caramelized pineapple. The finish is full-bodied and lingers with a pleasant, spicy warmth, rounding out a mezcal that is smooth enough for sipping yet complex enough to reward slow tasting.
