Ilegal Mezcal traces its roots to Café No Sé, a bar in Antigua, Guatemala, opened by American entrepreneur John Rexer in the early 2000s. Rexer began informally bringing mezcal up from Oaxaca to keep the bar stocked, and in 2006 he formalized the brand with fourth-generation mezcaleros Armando and Álvaro Hernández, whose family has produced mezcal for generations in Santiago Matatlán. The brand grew from a bar's house pour into one of the most widely recognized names in mezcal, eventually coming under full ownership of Bacardi in 2023.

Ilegal Joven is made entirely from Espadín agave that reaches full maturity before harvest. Following traditional Oaxacan methods, the piñas are roasted in an underground pit, crushed, fermented, and then double distilled in copper stills in the Santiago Matatlán valley. The mezcal is bottled unaged so its clear color and youthful character carry through, with the producers avoiding any artificial colors, flavors, or additives throughout the process.

The nose offers agave, citrus, and a touch of smoke, while the palate brings pepper and roasted agave sweetness with occasional notes of caramel or vanilla. The finish is smooth and moderately smoky, making it a versatile mezcal equally suited to sipping neat or serving as the base for agave-forward cocktails.
