Ilegal traces its roots to Café No Sé, a bar in Antigua, Guatemala opened by American entrepreneur John Rexer in the early 2000s. To keep the bar stocked, Rexer began informally bringing unbranded mezcal up from villages across Oaxaca, and in 2006 he formalized the brand alongside fourth-generation mezcaleros Armando and Álvaro Hernández. Ilegal became one of the first brands to popularize aged mezcal in the US market, building its reputation on Reposado and Añejo expressions that introduced whiskey and tequila drinkers to the category through familiar, oak-driven flavors.

Reposado starts with Espadín agave grown in the Tlacolula region, harvested at nearly ten years of age. The piñas are roasted for five to seven days in an earthen pit lined with river stones, then crushed using a horse-drawn tahona before natural fermentation. The mash is distilled once in stainless steel and once in copper, and the resulting spirit rests for four to six months in a mix of new and used American oak barrels sourced from a family-run cooperage, a period long enough to round out the mezcal's smoke without erasing its agave character.

The nose offers caramelized pear and bitter orange with a hint of dried chipotle, while the palate brings clove, butterscotch, and vanilla in a smooth, velvety texture. The finish is glossy and refined, closing with soft wood smoke and a lingering touch of cocoa and orange peel.
