Dubonnet Rouge Vermouth 750ml
Dubonnet was created in 1846 by Parisian chemist Joseph Dubonnet, who developed the formula in response to a French government competition seeking a way to make quinine palatable for soldiers fighting malaria in North Africa. The drink caught on well beyond the Foreign Legion, becoming a fixture of Parisian café culture through the Belle Époque and later a favorite of Queen Elizabeth The Queen Mother, who helped cement its place in royal circles. Dubonnet is produced by Pernod Ricard in France, while the American market version has been made under license by Heaven Hill Distilleries in Kentucky since World War II, using a different wine base and recipe from the French original.
The French Rouge begins with Roussillon wines from five grape varieties, fortified and aged three to four years in oak vats. Rather than simple maceration, Dubonnet uses a distinctive percolation process, pumping a flavored mistelle under pressure through cocoa beans, cinchona bark, orange peel, coffee, cinnamon, chamomile, and elderflower over repeated eight-hour extraction cycles, a far more intensive method than most competitors use.
The result pours ruby red, with a nose of ripe cherry, raspberry, and blackberry alongside earthy pinecone and bay leaf. The palate turns rich and fruity, with fig and dried fruit leading to a subtly bitter, quinine-tinged finish reminiscent of a sweeter Campari.
