Dolin's history in Chambéry dates to 1821, when Joseph Chavasse began infusing a base wine with herbs and spices sourced from Savoy and beyond. His daughter, Marie Rosalie, married Louis Ferdinand Dolin in 1843, and the family recipe passed to him; after his death, Marie Rosalie ran the business herself and presented Dolin Vermouth at the Philadelphia Centennial Exhibition in 1876, where it won a gold medal, the first of many. The Sevez family purchased the company in 1919 and continues to run it today, upholding the AOC status that Vermouth de Chambéry earned in the early twentieth century.

Blanc was the first white vermouth ever produced, introduced in Savoie in 1881 and built from a base of Ugni Blanc wine macerated with roughly thirty-two botanicals, most sourced from the surrounding Alps. As with the rest of the Dolin range, whole plants are steeped directly in the wine rather than added as pre-made extracts, a slower process required under the AOC rules that gives the finished vermouth its depth. Ingredients reportedly include hibiscus, basil, cinnamon, and Alpine staples like wormwood and gentian.

The result is nearly clear with a faint golden hue, opening with aromas of camphor, mountain herbs, and citrus. On the palate, sweetness arrives first, giving way to fresh almond, peach, and mountain flowers, finishing silky and long with a gentle herbal edge.
