2021 Domaine Guion - Bourgueil Candide (750ml)
Domaine Guion traces its roots to the 1950s, when Stéphane Guion's father established the estate in the heart of the Bourgueil appellation along the Loire River. Remarkably ahead of their time, the family earned organic certification as early as 1965. Stéphane took over from his parents in 1994 after studying winemaking in Bordeaux and elsewhere in the Loire, and he has since deepened the estate's commitment to sustainable farming, earning Demeter biodynamic certification in 2021 while remaining a respected mentor to younger vignerons in the region.
Candide is sourced from the domaine's youngest Cabernet Franc vines, planted on clay and Turonian limestone soils in the commune of Benais. The certified organic fruit is hand harvested and fermented in stainless steel using only native yeasts, with a relatively short maceration of eight to ten days that preserves freshness and energy in the finished wine. Élevage takes place entirely in stainless steel for eight months, with no fining or filtration and only a small dose of sulfur added at bottling.
The wine shows bright aromas of cherry and blueberry layered with subtle herbs and a peppery lift. On the palate it is crunchy and lively, with fine tannins and a mineral edge that carries through a clean, energetic finish. Its light, chillable character makes it a natural match for roast pork, grilled burgers, or a fresh goat cheese.
