Barr Hill Vodka 750ml
Barr Hill Vodka is produced by Caledonia Spirits, a distillery founded in 2011 in Hardwick, Vermont by lifelong beekeeper and farmer Todd Hardie, working alongside master distiller Ryan Christiansen. The company grew directly out of Hardie's decades of beekeeping in Vermont's Northeast Kingdom, and its mission centers on supporting pollinators and regional agriculture, a commitment reflected in every bottle the distillery produces, including its well-known Barr Hill Gin.
This vodka is distilled entirely from raw Vermont honey, with roughly four pounds going into every bottle, sourced from Hardie's own network of colonies. The honey is never heated before fermentation, a deliberate choice that preserves its wild yeast and natural aromatics rather than stripping them away. After cold fermenting for approximately three weeks, the wash is distilled just once or twice through a custom fractionating column still, far fewer passes than most vodkas undergo, which allows more of the honey's character to carry through into the finished spirit. Each bottle is brought to proof and sealed with beeswax before release.
The nose opens with soft grain sweetness and delicate floral honey notes, along with a faint herbal freshness. On the palate, the texture is silky and refined, carrying clean honeyed sweetness alongside soft vanilla and a whisper of light citrus and spice. The finish is smooth and rounded, with a gentle warmth that lingers pleasantly.
