Żubrówka Biała comes from the same Polmos Białystok distillery in northeastern Poland responsible for the brand's well-known bison grass vodka, though this expression takes a different path entirely. The name means white in Polish, a nod to the Białowieża Forest in winter, and the brand carries a legacy that stretches back to the 14th century in Polish vodka-making tradition. Where the flavored bottling built its reputation on grass-infused character, Biała was developed to showcase the distillery's grain and water on their own, without any added botanicals.
Biała is produced from carefully selected Polish rye, distilled repeatedly, up to six passes, to achieve a clean, aromatically straight spirit. The water used comes from springs near the Białowieża Forest, contributing to the vodka's clarity. Following distillation, the spirit undergoes several rounds of filtration, refining the texture further and giving the finished vodka its notably silky mouthfeel.
The nose is neutral and clean, with fine cereal notes and just a whisper of green apple or pear in some batches.
