Hakata Whisky comes from the Hikari Distillery in Fukuoka, Japan, a producer founded in 1912 with deep roots in traditional Japanese fermentation. The distillery draws on techniques more commonly associated with sake and shochu production, applying its own regional character to whisky making on the southern island of Kyushu.
This expression is distilled from 100% malted barley, with a portion fermented using koji, the mold traditionally used in sake brewing, which lends the spirit a savory, umami quality uncommon in most whisky. After distillation, the whisky rests for twelve years in sherry casks housed across both traditional and open-air warehouses, where it experiences Fukuoka's full seasonal swing, from humid summers near 95 degrees Fahrenheit to winters closer to 38. This dramatic temperature range accelerates maturation and helps develop the whisky's distinctively bold, layered character.
On the nose, look for champagne, dried plum, and sweet dates. The palate turns rich with stewed fruit, caramelized orchard notes, and apple cider sweetness, all carried by the deep influence of sherry. Oak and umami intertwine throughout, giving way to a finish that turns citrusy and sweet, with lingering raisin and orange peel.
