WhistlePig launched in Vermont in 2007, building its reputation on 100% rye whiskey at a time when most American producers relied on the legal minimum of 51 percent. Master distiller Dave Pickerell, often credited with shaping the modern craft whiskey movement, helped guide the brand for much of its early history, and PiggyBack stands as one of the last expressions he developed before his passing in 2018. The bottle carries small tributes to him, including his birth and death years worked into the label design, and the whiskey was conceived specifically with bartenders in mind.
PiggyBack is distilled entirely from rye grain and aged for a minimum of six years, though the blend draws on barrels ranging up to eight years old, with an average maturity closer to seven. It is bottled at a distinctive 96.56 proof, a strength WhistlePig describes as calibrated for the balance of strength, sweetness, and bitterness that cocktails demand. The bottle's ergonomic shape was also designed with bar use in mind, reflecting Pickerell's stated goal of making a well-aged rye that could still hold its own when mixed.
The nose offers fresh cinnamon, black peppercorn, and a bright hit of citrus zest, while the palate turns bold with cocoa, cardamom, and cured leather. The finish runs long, layering baking spice and vanilla over a final peppery note. It performs equally well shaken into a whiskey sour or stirred into a Manhattan, giving cocktails real structure and spice.
