The Filipa Pato 3B Brut Nature is a thrilling blanc de blancs sparkling wine from Portugal's Bairrada appellation, made by one of the country's most compelling winemaking voices. Filipa Pato launched her own project in 2001, driven by a passion for Bairrada's traditional indigenous varieties. Working alongside her husband, Belgian sommelier and restaurateur William Wouters, she farms 12 hectares across Bairrada using certified biodynamic practices, producing what the couple describes as "authentic wines without makeup." As the daughter of legendary Bairrada producer Luís Pato, Filipa brings both deep regional roots and a fiercely independent sensibility to every wine she makes.

The white 3B takes its name from the same triple-B logic as the rosé: Bairrada, and the indigenous white varieties that define the appellation. The blend is anchored by Bical, with Maria Gomes and Cercial rounding out the assemblage, all grown on chalky clay soils. Primary fermentation takes place in tank with wild yeast, followed by a traditional-method secondary fermentation in bottle with nine months of aging sur latte, and zero dosage. The vines are around 30 years old, planted on sand over clay-limestone, and the wine is made with minimal sulfur addition. The result is an energetic, mineral-driven sparkler: a very mineral nose with a certain smokiness from the limestone soil, distinguished notes of pear typical of Bical, and fennel, with time in the glass revealing thyme and honey. The palate is lean, focused, and saline, with vivid acidity and fine, persistent bubbles. Serve well chilled as an aperitif, or alongside oysters, grilled sardines, or sushi.
