2023 The Paring Chardonnay is the second label from Jonata and The Hilt, crafted from small lots drawn from the Sta. Rita Hills estate vineyard of Salsipuedes, including the Bentrock, Radian, and Puerto Del Mar blocks that don’t make The Hilt’s flagship wines. This is presented in a 750 ml bottle and offers a vibrant, accessible entry point into the estate’s unique terroir.

Although not certified biodynamic, these vineyards are farmed to the highest standards, functioning as a polyculture with bee hives, grazing ruminants, fruit, and olives, all without artificial fertilizers, pesticides, or herbicides. Winemaking mirrors The Hilt’s approach, with entirely native fermentations and no added nutrients, enzymes, acids, or sugars, though The Paring’s elevage is shorter and leans more on stainless steel and neutral oak.

Style-wise, The Paring Chardonnay presents as medium-bodied, juicy, and lively, with integrated acidity and a supple, easy-drinking profile. Aromas and flavors unfold with melon and stone fruits, brioche, and honeyed floral notes, all wrapped in bright, energetic fruit with excellent delineation. Yellow apple and hard pineapple mingle with crisp acidity, stone fruit, a touch of sumac, and a filigree of minerality.

Compared to The Hilt, this is a more exuberant, fruit-driven, and fresh pour, making it an approachable introduction to Sta. Rita Hills’ distinctive character.
