2024 Pago de los Capellanes - O'Luar do Sil Godello (750ml)
Pago de los Capellanes is best known for its reds in Ribera del Duero, built by Paco Rodero and his wife, Conchita Villa, on land that once belonged to Paco's father. In 2014 the family expanded west into Galicia, founding a second winery called O Luar do Sil in the village of Seadur, in Valdeorras, to finally realize their ambition of making a wine entirely devoted to white grapes.
This Godello comes from vineyards planted on granite hillsides around Seadur, hand-harvested and passed over a selection table before being fully destemmed. The grapes are chilled to nine degrees Celsius and left to macerate for four hours, then gently pressed to draw out clean, high-quality must. Fermentation takes place in temperature-controlled stainless steel, after which the wine rests briefly on its lees before bottling, preserving its freshness and purity.
In the glass it shows a clean, pale gold color. Floral aromas mingle with green apple and pear, backed by a subtle mineral and balsamic edge. The palate is silky and round, with balanced acidity and a long, elegant finish. Pair it with grilled sardines, seafood paella, or a fresh goat cheese.
