Pietradolce was established in 2005 by the Faro family in Solicchiata, a village on the northern slopes of Mount Etna, with a mission to focus exclusively on indigenous Sicilian varieties. The estate now farms roughly eighty-six acres of fully estate-owned vineyards, and its meticulous approach to farming on the volcano's challenging terrain quickly earned recognition, with critics at the Wine Advocate calling it Etna's new rising star. That reputation has been built largely on wines that showcase the mountain's distinct volcanic character rather than any single winemaking trick.

This Bianco is made entirely from Carricante, the classic white grape of Etna, sourced from vineyards on stony, sandy loam soils shaped by centuries of volcanic activity. Carricante is a naturally vigorous variety whose name references the heavy cartloads of fruit it can produce at harvest, so careful pruning for lower yields is essential to concentrate flavor and ensure timely ripening. The grapes are harvested by hand in October, gently pressed, and vinified entirely in stainless steel to keep the focus on freshness and the vineyard's mineral character rather than any oak influence.

The wine pours a pale straw-yellow with green highlights, opening with aromas of white flowers, chamomile, and crushed apple that give way to green apple, pear, and a distinct saline edge. The palate is medium-bodied with a creamy texture, crisp acidity, and a lingering mineral finish with a touch of bitter lemon. It pairs beautifully with grilled branzino, fresh burrata, or a simple seafood pasta.
