A certified-organic pét-nat from Riccardo Baldi's biodynamically farmed hillside estate in Staffolo, fermented in stainless steel on indigenous yeasts, rested on fine lees for four months, then bottle-refermented naturally. Intense aromas of yellow fruit, yeasts, wild fennel, and bread-making on the nose, with a dry, crisp, and refreshing palate with a mineral, salty edge — the kind of everyday frizzante that disappears fast.
