2022 Argyros - Assyrtiko Santorini Cuvee Evdemon (750ml)
Estate Argyros has cultivated vines on Santorini since 1903, when the family first began working the island's volcanic soils. Passed down through four generations, the estate now farms some of the oldest vineyards on Santorini and is known for pushing traditional winemaking toward new expressions of the island's signature grape. Under fourth-generation winemaker Matthew Argyros, the estate continues experimenting with rare parcels while holding onto the ungrafted, basket-trained vines that define its heritage.
Cuvee Evdemon draws from a single parcel in Pyrgos planted with biodynamically farmed Assyrtiko vines estimated at 150 to 200 years old, among the oldest on the island. These ancient vines yield very little fruit, concentrating flavor and structure in the finished wine. Roughly three quarters of the blend ferments and ages in stainless steel for about thirty months on fine lees, while the remainder spends a year in French oak barriques before the components are combined, an unusually long aging regimen for the region.
The result is a dense, architecturally built white with lemon and green apple over notes of dough, toasted bread, and gentle vanilla from its oak treatment, framed by pronounced salinity. Best paired with grilled lobster, roasted sea bass, or aged sheep's milk cheese, it also rewards patient cellaring.
