Le Sabbie dell'Etna Bianco blends Carricante and Catarratto, two grapes closely tied to Etna's winemaking history, grown at the Cavanera estate near Castiglione di Sicilia. Etna's cold winters and reduced sunlight slow the ripening process, allowing the grapes to develop their aromatic character gradually. Hand-harvested in October, the grapes are gently pressed and fermented at controlled temperatures, with the wine resting for at least two months before release to let its volcanic character fully emerge.

The wine pours a pale straw yellow with green highlights, opening with mimosa and broom blossom alongside white peach, pear, and a touch of salted lemon. Volcanic minerality and a saline edge carry through a fresh, tangy finish. It works well with grilled fish, shellfish, and fresh cheeses.
