From the seaside plains around the Étang de Thau lagoon, where relentless Mediterranean sun is tempered by salt breezes off the water, this is Picpoul at its most classic and food-friendly. Pale straw with green glints, it opens with grapefruit, white peach, lemon zest, and a whiff of acacia blossom, then delivers the variety's signature zesty, saline-driven acidity — Piquepoul literally means "lip-stinger." Harvested to lock in freshness, fermented cool in stainless with no malolactic to preserve the tension. Made for oysters and shellfish, but it never met a fish it didn't like. One of the great everyday values in French white wine.
