2025 Gerard Boulay - Sancerre a Chavignol (750ml)
Boulay is Sancerre royalty, farming nine hectares in Chavignol on the same Kimmeridgian "terre blanche" limestone that defines Chablis — a domaine with roots tracing back to 1380 and organic farming since 1990. Gérard adds no yeast and little to no sulfur, letting the wine ferment and age entirely in tank, unshaped by oak. The result is a benchmark expression of the appellation: crisp and mineral-driven, with citrus, green apple and flint on the nose, layered white peach and floral notes, and a long, precise finish carried by vibrant acidity. A soil-inflected Sauvignon Blanc built to age well past the usual Sancerre drinking window — excellent with oysters, seafood, or goat cheese.
