Domaine Sigalas was founded in 1991 by Paris Sigalas, and the estate quickly became a driving force in establishing Santorini as one of the world's premier white wine regions. It was among the first producers on the island to champion a varietal expression made entirely from Assyrtiko rather than blending it with other native grapes. Today the winery is guided by winemaker Sara Iakovidou alongside vineyard manager Stratos Xyrafis, continuing a legacy built on respect for the island's rare volcanic terroir.

This 2025 vintage is sourced from vines exceeding 60 years of age, grown in the pumice, lava, and pyroclastic soils of Oia. Santorini's harsh winds and scarce rainfall push growers to train vines in low, basket-shaped formations that shield fruit and capture moisture from morning mist. Grapes are handpicked and sorted before whole-bunch pressing, then fermented in stainless steel and aged on the lees for at least four months with periodic stirring to build texture.

Pale lemon in color, the wine offers an expressive nose of peach, lemon, lime, and white blossom, with subtle savory notes lent by lees aging. On the palate it is rich and layered, balanced by vibrant acidity and an inviting salinity that carries through a long finish. It pairs beautifully with grilled octopus, fresh oysters, or a classic Greek salad topped with feta.
