The “cuvaison” lasts 21 days with the juice being pumped over the cap during the first 6 days. The wine is aged for 6 months in large oak and chestnut barrels which range in age up to 200 years old. The wine has a bright violet color and aromas of wild red fruit and pepper which follow through on the palate with freshness and vibrancy.
The Blanc Perlé, which is sometimes labeled as Gaillac Fraîcheur Perlé by other producers, has been produced in Gaillac since the 1950’s. The freshness in the wine is achieved by preserving some of the natural CO2 that occurs during the vinification, although for decades most producers have added CO2. Mathieu does not add CO2 or anything else to his wines as is certified by the agency, Nature et Progrès. The wine has evolved from being a blend of two or three varieties to being produced from a single variety, the indigenous Loin de L’Oeil. The grapes are pressed slowly and gently in a pneumatic press. Because of the low yields this wine fills the palate with a wonderful concentration of flavors while retaining a freshness that is underscored by mineral, petrol and citrus notes. Mathieu adds 15mg/L of SO2 before bottling.
30% Chardonnay, 50% Jacquere, 20% Altesse. Strict selection in both vineyard and on sorting table before crush. Direct pressing. Alcoholic fermentation at 16C in thermoregulated stainless steel vats. Aged on the lees in their cellar.
This is now entirely made in house at the domain (rather than, as is commonly done, at a facility specializing in sparkling wine production). Minimum ageing on the lees is two and a half years, and the wine is subsequently disgorged upon order. Dosage is in the range of 6 grams per liter. Production averages 750 cases of 6-packs.
