George Dickel #5 Bottled in Bond 12 yr (Spring 2011) Whiskey 750ml

George Dickel Bottled in Bond Spring 2011 comes from Cascade Hollow Distilling Co. in Tullahoma, Tennessee, and marks the fifth release in George Dickel's acclaimed Bottled in Bond series, launched in 2019 under the direction of Nicole Austin, the brand's director of whiskey. That debut release won Whisky Advocate's Whisky of the Year award, and each subsequent vintage has continued to draw strong critical attention for the quality found at a relatively modest price.

This whiskey was distilled during the spring 2011 season and aged a full twelve years before bottling, well beyond the Bottled in Bond Act's four year minimum. As required by the 1897 law, it comes from a single distillery during one distilling season, matures in a federally bonded warehouse, and bottles at exactly 100 proof. It carries George Dickel's standard mashbill of eighty-four percent corn, eight percent rye, and eight percent malted barley, and like the rest of the portfolio, undergoes the Lincoln County charcoal mellowing process characteristic of Tennessee whiskey.

The nose offers overripe cherries, macadamia nut cookies, and toasted oak. The palate is soft and velvety, carrying bold fruit and nut character. The finish lingers with roasted nuts and warmth.
