Knob Creek Small Batch Bourbon Whiskey is produced by Beam Suntory at the historic Jim Beam Distillery in Clermont, Kentucky, a site with roots stretching back to the 1790s, when Jacob Beam first distilled whiskey on the family farm. The brand itself was founded in 1992 by Booker Noe, Jim Beam's grandson, who wanted to revive the full-bodied, patiently aged bourbon style that existed before Prohibition forced distillers to rush their whiskey to market. Today the distillery is led by Fred Noe, Booker's son and the seventh generation of the Beam family to oversee production.

Knob Creek is built on Jim Beam's low-rye mash bill, generally around 75 percent corn, 13 percent rye, and the remainder malted barley. Following fermentation and distillation, the whiskey rests in deeply charred new American oak barrels for a minimum of nine years, aging on the middle floors of Jim Beam's rickhouses to moderate temperature swings over such an extended period. Master distillers hand-select barrels of matching character to blend into each small batch, then bottle the whiskey at 100 proof, a strength meant to preserve the bold, high-intensity profile Booker Noe originally envisioned.

The whiskey opens with caramel, vanilla, and toasted nuts on the nose, backed by baking spice and a faint breadiness from the grain. On the palate it turns rich and full-bodied, with charred oak, dark fruit, and a peppery rye bite, finishing long and warm with lingering spice and sweetness.
