La Higuera Sotol Cedrosanum 750ml
La Higuera was created by Esteban Morales to explore the range of character found across sotol's many plant varieties, and today the brand is distributed in more than twenty countries. Production takes place in Aldama, Chihuahua, under third generation Maestro Sotolero Don Gerardo Ruelas, whose family's decades of experience shape every batch that carries the La Higuera name.
This bottling highlights Dasylirion cedrosanum, one of sixteen sotol varieties recognized within Mexico's denomination of origin for the spirit, which restricts production to Chihuahua, Coahuila, and Durango. The mature plants are cooked in an earthen pit fired with black oak, then hand-milled with axes before natural fermentation with wild yeast in pine vats. The fermented mash is double distilled in copper alembic stills and bottled unaged, in the joven style, letting the plant's character come through unobscured.
Cedrosanum tends toward the smoother end of La Higuera's range, opening with mineral and caramel notes on the nose alongside a whisper of pine. The palate brings smoked grass and cedar, with soft leather, a touch of licorice, and gentle citrus. The finish is dry and well balanced, closing with a lingering earthy warmth.
