Old Crow Bourbon traces its name to Dr. James C. Crow, a Scottish-trained physician and chemist who arrived in Kentucky in the 1830s and began distilling on Glenn's Creek near Versailles, on grounds now occupied by Woodford Reserve. Crow is widely credited with refining the sour mash process, applying careful measurement of pH and specific gravity to a craft that had previously relied on instinct, and Old Crow became one of the first bourbons to put "sour mash" on its label. The whiskey earned a devoted following among figures like Ulysses S. Grant and Mark Twain, and after passing through National Distillers and then American Brands, the brand landed with Jim Beam in 1987, where it remains a value-priced bourbon today.

Old Crow is now distilled at Jim Beam's Clermont, Kentucky facility using the same mash bill and yeast strain as standard Jim Beam bourbon, roughly 75 percent corn, 13 percent rye, and the remainder malted barley. Unlike its full-strength sibling, Old Crow is aged for a shorter period, typically around three years, in new charred oak barrels before being bottled at a lower 80 proof, a combination that keeps costs down while preserving the classic Beam house character.

The nose leans toward light vanilla, honey, and toasted grain with a touch of oak. On the palate, straightforward caramel and grain sweetness come through with a notable bite on the tip of the tongue, while the finish is short and clean, closing on a simple, classic sour mash sweetness.
