Hillside Select is Shafer Vineyards' flagship wine, first produced in 1983, the same year Doug Shafer was promoted to head winemaker. His father John Shafer, a wartime B-24 bomber pilot who left publishing on the East Coast to head west, was a founding father of the Stags Leap District, deliberately searching for hillside vineyard land because "Bacchus loves the hills." The vineyards sit beneath the craggy Stags Leap Palisades, where car-sized boulders had to be cleared with dynamite before planting. The soil is thin, alluvial volcanic, and poor in nutrients, producing small, thick-skinned, intensely flavored Cabernet berries. The Palisades' inward curve helps circulate cool air up from San Pablo Bay, so the grapes are cooled by wind but warmed by sun, retaining acid while achieving full phenolic ripeness. The wine is aged up to 32 months in 100% new French oak, and production runs close to 2,000 cases a year.

By 1992, Shafer's quality level, building since 1991, had already pushed Hillside Select into an elite grouping of California Cabernet producers, part of a run of superlative vintages through the 1990s that made nearly everything from Shafer highly sought after.

With more than three decades of bottle age, this 1992 shows the full pleasures of maturity. Expect a beautiful magenta color with almost no bricking, and a glorious palate of red fruit, cassis, and a hint of cinnamon carrying through a long, acid-driven finish. Medium-plus in body, with tannins now fully integrated and resolved, this wine drinks at its peak, showing amazing tension alongside a soft, velvety texture. With air, notes of eucalyptus and menthol can emerge, while the fruit remains remarkably fresh and sweet throughout.

This is a special-occasion bottle, best paired with roasted or grilled red meat, aged hard cheeses, or simply savored on its own.

"Harvested between 24 and 25 brix, the 1992 Cabernet Sauvignon Hillside Select is incredible and shows the richness, depth, and opulence that make this cuvée so special. Full-bodied aromas and flavors of cassis, saddle leather, graphite, and sandalwood are just some of its nuances, and this beauty has resolved tannins, terrific balance, and a great finish. It’s going to hold in its current stage for another decade, and I suspect it will have a gradual decline after that."
