Dom Pérignon is the prestige cuvée of Moët & Chandon, sourced from roughly 300 hectares of grand and premier cru vineyards in Champagne that the house considers its most distinguished holdings. Named for the Benedictine monk credited with early advances in Champagne winemaking, the label has been a benchmark of the region since its first vintage release in 1921. The 2008 vintage was overseen by longtime chef de cave Richard Geoffroy and later shepherded through its extended aging by his successor, Vincent Chaperon.

P2, or Plénitude 2, denotes a wine that has spent significantly longer resting on its lees under cork than a standard release, roughly fifteen years in this case, before disgorgement. This particular cuvée is an even blend of Chardonnay and Pinot Noir from a growing season marked by a cool, cloudy start followed by a warm, sunny finish, which gave the grapes both bright acidity and real ripeness. The additional years in the cellar deepen texture and complexity well beyond the wine's original release.

The Champagne shows aromas of red berries, brioche, and toasted nuts, with a silky, richly textured mousse carrying flavors of citrus, chalk, and a savory umami edge through a long, precise finish. It pairs beautifully with oysters, roasted turbot, or aged cheeses.
