2008 Signatory Port Dundas 16 yr Single Grain 700ml

Port Dundas Distillery was built in 1811 at the highest point in Glasgow and grew into Scotland's largest grain distillery, later merging with the neighboring Cowlairs distillery in 1860. As a founding member of the grain distillers' consortium that became DCL, Port Dundas supplied grain whiskey for blends including Johnnie Walker, Haig, and Bell's before Diageo closed the site in 2010 and demolished it the following year, leaving remaining casks as increasingly scarce relics of Lowland distilling history.

This bottling is an independent release from Signatory Vintage, one of Scotland's most established independent bottlers, known for showcasing single casks with minimal intervention. Distilled in August 2008, the spirit spent sixteen years maturing in a pair of second-fill Oloroso sherry butts, an unusual choice for grain whiskey, which is typically aged in ex-bourbon barrels. Signatory bottled the whiskey without chill filtration or added color at 46% ABV.

The nose offers sherried fruit, butterscotch, and fruit-laden flapjack, with cakey spice developing over time. On the palate, honeyed fruit and milk chocolate meet maple granola and rich oaken spice. The finish is warming and long, closing on candied nuts and dark chocolate-dipped orange.
