2018 Domaine Overnoy-Crinquand - Savagnin Arbois-Pupillin (750ml)
Domaine Overnoy-Crinquand farms in Pupillin, a small village at the heart of the Arbois appellation, where the same family has worked the land for three generations. Mickaël Crinquand now oversees the vineyards, continuing a poly-cultural tradition that includes dairy cattle for Comté cheese production alongside 5.5 hectares of vines planted on the steep clay-limestone slopes known as La Bidode, all farmed organically since the estate's founding.
This Savagnin comes from a single parcel of gray marl soil just outside the village and spends around four years aging sous voile, beneath a natural layer of yeast, inside large old oak foudres, a traditional method similar to that used for the region's famous Vin Jaune. The wine is fermented spontaneously with minimal sulfur, and the extended time under flor develops the deep, savory character typical of this old-fashioned Jura style.
The result is golden in color with a distinctly oxidative profile, showing pronounced notes of toasted hazelnut, beeswax, and dried fruit, along with noticeable bitters and high acidity. It is intense and structured, finishing long with a penetrating, almost tannic edge. It pairs well with Comté, curried dishes, or richly spiced fare.
