2018 Domaine Pignier - Sauvageon Cotes du Jura (750ml) [PRE ARRIVAL]

Domaine Pignier has been in the same family since 1794, making it as traditional as it is forward-thinking. The estate has farmed biodynamically since 1998 and holds organic certification dating to 2002. That long commitment to careful farming shapes a range of distinctive wines from the Côtes du Jura.

The 2018 Sauvageon is made entirely from Savagnin, a rare and ancient white grape that thrives in the Jura's cool climate and limestone-rich soils. It is made in the ouillé style, in which the wine is kept topped up to limit contact with air, rather than the oxidative approach behind Vin Jaune. Savagnin's naturally high acidity and mineral backbone suit this fresher, non-oxidative style. It is raised in an egg-shaped tank.

Pale straw-gold in the glass, it shows citrus aromas that are both refined and powerful. On the palate, candied citrus and nuts carry through a long, finely detailed finish, supported by a firm structure that suggests real aging potential.
