2018 Stephane Tissot - Savagnin Arbois Vin Jaune Curon (620ml)
Domaine André et Mireille Tissot was founded in 1962 in Montigny-lès-Arsures, near the town of Arbois in the Jura. Stéphane Tissot and his wife Bénédicte took over the estate in 1990, and Stéphane has since become one of the region's most recognized names, having converted the vineyards to organic farming in 1999 and biodynamic practices in 2004. The domaine is known for its single vineyard bottlings that highlight the diversity of Arbois terroir.
Curon is a distinctive Arbois parcel with calcareous scree soils formed from Bajocian limestone, facing mainly south and southwest. This cuvée is made entirely from Savagnin and follows the traditional path to Vin Jaune, aging in barrel for more than six years without topping up. A natural veil of yeast, known locally as voile, forms on the surface and slowly shapes the wine through controlled oxidation rather than full exposure to air.
The result is a deep golden wine with aromas of citrus, spice, and toasted nuts. On the palate it is full and concentrated, with a fresh, faintly bitter edge and a long mineral finish that lingers well after each sip. It pairs naturally with Comté cheese, poultry in cream sauce, mushroom dishes, or roasted fish.
