Caparsa is a small, family-run estate in Radda in Chianti founded by Reginaldo Cianferoni, whose son Paolo now runs the farm with his own family alongside him. Paolo's father saved enough to buy the land while working as a vineyard manager for a much larger producer, and the estate has been certified organic since 2005, both in the vineyard and the cellar. Paolo has become known as something of a farmer-philosopher, committed to working the land in step with the surrounding environment and the region's older agricultural traditions.

The Caparsino comes from vineyards planted at roughly 450 meters, on a mix of alberese and galestro rock along with clay and sand that give Radda's Sangiovese its characteristic lift and structure. The grapes ferment in cement tanks using only wild yeasts, with no filtration, before the wine ages for about a year in large oak casks holding roughly 1,800 liters, a scale that allows slow, gentle development without imparting heavy oak character.

The wine offers sweet red cherry and raspberry fruit layered with chalk, mint, dried flowers, and white pepper, with a distinct saline thread running through the middle palate. Dry and medium-bodied, it carries bright acidity and well-integrated tannins through a long, spiced finish. Pair it with panzanella, roast pork, or grilled halloumi with chili honey.
